I have been craving egg rolls!!

 

In my quest to find a good recipe that my entire family would enjoy, I came upon a Buffalo Chicken egg roll recipe from Can you Stay for dinner?  My husband and I love buffalo everything, so I had to put this on my list of meals this week.  The beauty of these is that you can fill your egg rolls with whatever floats your boat.  There are no rules!

With my ingredients ready, I boiled the chicken breasts for 20 minutes and shredded.  Preheat over 400 degrees.

I have neve used egg roll wraps before, but it was fairly easy peasy.  Just don’t over stuff, them. Lay one wrap out on a clean surface and layer your filling.  I stuffed mine with coleslaw, shredded chicken and blue cheese crumbles.

Now the fun part rolling them up!  Obviously, I was excited to roll these up that I completely neglected to take a picture of this step.  Hopefully this explanation is helpful.  Start from the bottom corner and fold it over your filling.  Next take the left corner and place it over, do the same with the right corner.   Roll the egg roll up so that the top corner comes over like an envelope.  Take a drop of water and use it to keep the wrap closed {like closing an envelope}.

Wallah!  A perfectly wrapped egg roll.   Spray the pan with PAM and generously spray each egg roll all around with PAM.  Place in oven for 10 minutes, flip egg rolls and cook another 10 minutes.

I’m going to be honest and say that while these were amazing. Next week I will be dropping these in my fry daddy, a little grease just might kick my craving.
