Seafood inspired recipes have always been a huge part of my life. My parents raised my brother and I to have extensive palates and ventured to create delicious meals almost every night. We where always encouraged to try traditional Mexican dishes. One of my favorite meals from my childhood to this day is my moms jalapeño and shrimp queso flameado. We made queso quite often and she usually added whatever we had on hand to give it flavor, but our seafood Monday usually equated to us begging for this La Morena jalapeños with shrimp queso flameado. Having my own family of five I now have the opportunity to recreate these family recipes and expand my boys palates.
In true Monday fashion, I headed out in the early morning to La Michoacana to pick up La Morena sliced jalapeños, chipotle peppers and other sabor tradicional ingredients. You can find La Morena products at Hispanic grocery stores like my local La Michoacana and Fiesta supermarket.
Jalapeños and Shrimp Queso Flameado Ingredients:
- 7 oz La Morena Sliced Jalapeños (to taste)
- 10 medium shrimp (peeled & deveined)
- 1 Cup Colby Jack Cheese (shredded)
- 2 Cups Asadero cheese (shredded)
- 2 teaspoons oil separated
- 7 oz La Morena chipotle peppers (for a smoky chipotle flavor if desired)
- 1/4 Cup Soy Chorizo (this is for our meatless recipe – you can omit it to keep it meatless)
Cook soy chorizo in a pan until browned and becomes slightly oily. Remove and place in small bowl. Cook shrimp in same pan with a teaspoon of oil added until cooked fully, remove and place in bowl. Preheat oven to 350 degrees. Take a cast iron skillet and grease it with 1/2 teaspoon oil. Toss all of shredded cheese in skillet. Top with shrimp, soy chorizo, sliced jalapeños and chipotle peppers to taste. Add more or less depending on your taste for sabroso flavors.
Cook at 350 degrees in oven for 15 minutes or until nice and bubbly.
Immediately serve La Morena jalapeños and shrimp queso flameado with tortilla chips and tortillas.
