This is a copycat recipe for Gringo Dip from 54th Street Grill.  I played around with this recipe a bit before I was happy with it.  Another slightly different version of this is the zesty spinach chili cheese dip I posted last week to go with chicken strips.

CopyCat Gringo Dip (54th Street Grill)

You will need 16 oz. block of pepper jack cheese, 1/2 an onion, 1 small tomato, 1 bunch of cilantro, 1/2 lime juice, 1 teaspoon cayenne pepper (more or less to taste), 2 tablespoons Parmesan cheese,  4 oz. whole milk, 2 tablespoons butter and 10 oz. creamed spinach.

Cook spinach to package directions.  While spinach cooks dice up the cheese, tomato, onion, (1) handful of cilantro,and place in a microwave safe bowl.  Add in milk, melted butter, Parmesan and lime juice.  Place bowl in microwave for two minute intervals, mixing in-between.  When cheese is thoroughly melted remove.

 Add creamed spinach to cheese dip and mix until completely creamy.  Add cayenne pepper to taste.  Mix together.
