

My boys have been devouring peanut butter and jelly sandwiches lately. It hadn’t hit me how much we have been using peanut butter until my husband sent me a text asking to pick up peanut butter and milk. I didn’t buy any because I knew it was only a week or so ago that I had purchased a jar. Needless to say I had three sad boys when I got home, who where all patiently waiting for a peanut butter and jelly snack before dinner and that jar of peanut butter I was positive was in the pantry was cleaned out.
My brain got to turning the next few days on peanut butter recipes. After all peanuts and peanut butter provide lasting energy and are a smart addition to your diet any time of the day. It is also an affordable source of protein. The National Peanut Board has a sleuth of recipes for incorporating peanuts into your families diet. Since we seem to have a major sweet tooth this time of year, I opted for trying peanut butter truffles. I have made truffles, but have never thought to try peanut butter truffles.

Peanut Butter Truffles are so simple and require absolutely no cooking or baking skills. With 7 grams per serving, peanuts have more energy boosting protein than any nut. Coupled with their more than 30 essential vitamins and nutrients, peanuts are considered a Superfood.
To make Peanut Butter Truffles
Take an 8 oz package of cream cheese and plop into a bowl. I let mine sit out long enough to get soft.

Take 1 cup of semi-sweet chocolates. Place them in the microwave 1 minute (or until melted).

Stir chocolate with a fork and add to your bowl of cream cheese.

Next take 1 cup of peanut butter.

Plop that into your bowl. Use a mixer on low to mix ingredients together.

Once you have a nice even consistency pour into a square 8″ dish. Spread it evenly in the dish and place it in your refrigerator about an hour.

Once you have let the truffle mixture set use a tablespoon or melon baller to scoop out nice round-ish scoops.

Quickly take each scoop and roll it into a nice ball. Don’t take to much time doing this, you want your truffles to stay cool.

Take peanut halves and place them in a baggie and get them nice and crushed for a garnish. I use a rolling pin to mash them up.

Roll your truffle in the peanut pieces.

Since we are in the Halloween spirit, I placed my truffles in candy liners.

keep them refrigerated until ready to serve. They are super delish and remind my boys of peanut butter cups with a crunchy treat.
