This freshest and best avocado salad recipe, this recipe is courtesy of my grandmother. She has the best recipes, anybody that knows her can agree her dishes are one of a kind and simply amazing. Her avocado tree produced so many avocados most seasons and we ate tons of them. My very favorite way to eat avocados is in a simple chopped up Avocado salad, exactly the way we had them at mi abuelas. The key ingredient, almost ripe avocado chunks.
Now that I don’t have the luxury of my grandmothers backyard garden, I rely on Avocados from Mexico to imitate her recipe.
Avocado Salad Recipe
1-2 large Cucumbers – chunks
3 medium size tomatoes – chunks
3 avocados – chunks
1 handful cilantro
1 lime
2 tablespoons olive oil
2 teaspoons coarse kosher salt
optional- a few dashes of your favorite hot sauce for a kick- add at the end
Layer cucumbers evenly, sprinkle a dash of salt – olive oil and lime juice.
Layer tomatoes evenly, sprinkle a dash of salt – olive oil and lime juice.
Layer avocados evenly, sprinkle a dash of salt – olive oil and lime juice.
Sprinkle cilantro ans add remaining salt, olive oil and lime juice to the top.
That’s it. I like to stick it in the fridge to keep the veggies nice and cold until ready to serve.
