A delicious mix of melted cheese and chorizo paired with homemade tortillas and warm tortilla chips makes this an irresistible dish. Did you know that California is the country’s leading producer of Hispanic dairy products and the number one dairy state in the US? California produces more milk, butter and ice cream than any other state.
There are over 25 varieties and styles of Hispanic-style cheeses that bear the Real California Cheese seal. The seal certifies these are natural cheeses made in California exclusively from Real California milk. Just look for one of these seals on your dairy products on your next grocery trip.
For this Queso Flameado Recipe you need:
- 2 Cups shredded Monterrey Jack cheese
- 1 Cup chopped up Oaxaca cheese
- 1/2 Cup Pork Chorizo
- Olive oil
- Tortilla Chips & Flour or corn Tortillas
Preheat oven 350 degrees. Take a large cast iron skillet and lightly grease with Olive Oil.

Add both cheese’s and place in oven for 15 minutes – or until completely melted.
Meanwhile cook chorizo on med-high heat in a skillet until bubbly and cooked thoroughly about 5 minutes.
Once cheese is completely melted take out of oven.
Add chorizo over top and serve hot right out of the skillet. Some like to mix it together, for eye appeal I leave it like this and let guests dig in with a small plate and fork. My boys eat there Queso Flameado in warm flour tortillas, while my husband and I dig in with tortilla chips.
