Chicken Cacciatore My Better for You Valentine’s Dinner

Since Valentine’s came and went with everyone curled up on the couch fighting off the flu,  Hubby and I had a V-day dinner redo yesterday.  We are finally all better and V-day had to wait for us this year.  The reality that we aren’t spring chickens and our metabolism is nothing like our boys has turned us into health conscious eaters.  We are highly aware that eating anything after the sun has gone down will most likely be the hardest to lose later.  So last night we put the kids to bed early, opened a bottle of wine and created a fabulous dinner for two (with plenty leftover to have lunch for today).

Welcome our better for us Valentine’s Day Dinner.  On the menu Chicken Cacciatore, this is by far one of my favorite  meals to make at home.  Simply because it combines my favorite ingredients.  No need to fuss with spices, salt and pepper.  The Classico canned Whole Pear tomatoes with fresh basil is so flavorful, that it packs a great punch of flavor perfect for this dish.  The Classico canned tomatoes are 100% all-natural, packed fresh with no preservatives, so this dish stays healthy all the way though.   I prepare this meal in 40 minutes flat, that’s another huge incentive for a hearty, healthy meal.

Chicken Cacciatore Ingredients:

Thin Sliced Chicken Breasts  (I get them sliced at the store, who has time to be slicing up raw chicken)

Classico Peeled Whole Pear tomatoes with fresh basil – 28 oz can (found at Wal-Mart)

1 Bell Pepper (sliced)

Button Mushrooms (Thinly sliced)

Unsalted -Stick of Butter

Angel Hair Pasta

Loaf French Bread* optional (and although not healthy a slice of hot crunchy bread is amazing with pasta.)

Boil Water and cook pasta according to directions as sauce is prepared.

Add 1/4 stick of butter to pan and brown chicken over medium-high heat, cooking through on both sides.  I wait until I see completely brown seared edges to pull the chicken off.  Once all of your thinly sliced chicken has cooked, remove from pan and set aside.

Add another 1/4 stick of butter, to cook up the veggies. Stir continuously for a three – four minutes as bell peppers and mushrooms soften and begin to cook.

*If you are serving with bread this is a good time to heat that up.*

Chicken Cacciatore with Classico Tomatoes the Recipe

Add in the can of Classico Peeled Whole Pear tomatoes and cooked chicken.  Heat 10 minutes, stirring occasionally.

Serve Chicken Cacciatore over angel hair pasta with a slice of french bread.   This healthy, hearty meal is great for you and is oh so good.  My husband and I look forward to enjoying this dish at home, I promise it won’t disappoint.  Even a big meat and potato lover like my husband has a spot in his belly for this chicken cacciatore recipe.
